Opened in 1994, Les Amis was Singapore’s first independent fine-dining restaurant. Today, its classic French cuisine – with the occasional touch of Asian – remains highly regarded among haute cuisine devotees. The kitchen helmed by executive chef Sebastien Lepinoy, who trained for 17 years under the late French chef Joël Robuchon. Instead of focusing on trends, Lepinoy highlights ingredients, including the rare Le Ponclet butter produced by a near-extinct Celtic breed of cows. His cold angel hair pasta with kombu, caviar and black truffle is a masterful interpretation of Italian-Japanese cuisine. Desserts here are by Cheryl Koh, who had been crowned Asia’s Best Pastry Chef in 2016 by 50 Best.
