Chinese fine-diner Peach Blossoms is housed on Level 5 of the Parkroyal Collection Marina Bay hotel, its dining room a serene, nature-inspired sanctuary offering spectacular views out across the bay and of the Singapore skyline. A seven-course set menu is available at lunch alongside the lunch and dinner à la carte offerings, all of them overseen by executive chef Edward Chong. A seasoned pro with over 18 years of experience, Chong is known for a cooking style that is authentically Chinese yet modern in spirit, with his elegantly plated dishes designed to awaken the senses. His signature dishes include deep-fried cigar rolls filled with black truffle, foie gras and prawn, stewed mung bean noodles with drunken crab in 10-year-old Gu Yu Long Shan rice wine and the four-combination platter with seafood fritters, chawanmushi, sliced peking duck and puff pastry. Drinks-wise, there’s a well-curated line-up of Chinese and international beers and wines, juices, speciality teas, cocktails and mocktails.
