Opened in Fraser Street’s Duo Galleria in 2022, the 24-seater Seroja (“lotus flower”) is Port Klang-born chef Kevin Wong’s tribute to the cuisine of the Malay Archipelago. Both the elaborate lunch and dinner menus elevate lesser-known Malay classics like roast chicken 'percik' and Kuih Sarang Semut: a honeycomb cake popular among children. The kitchen proves their mastery over Malay flavors with their spiced fish floss with raita and mint, sea conch with fermented shrimp dressing and onion jam and hand-dived scallop with lily bulb and ginger torch. Certain dishes, including the heavenly Borneo raw sugar bahulu - a Malay pastry similar to a madeleine - are served on handmade brassware crafted by some of the last few remaining brass artisans in Terengganu, Malaysia. Thoughtful wine and non-alcoholic pairings (keep an eye out for their house-made tamarind and papaya juice) make the course memorable for everybody at the table.
