Opened in Fraser Street’s Duo Galleria in 2022 and having picked up both a Michelin star and Singapore’s first Michelin green star within its first year, the 24-seater Seroja (“lotus flower”) is Port Klang-born chef Kevin Wong’s tribute to the cuisine of the Malay Archipelago. His 12-to-14-course tasting menus riff on culinary traditions and influences unique to this region via creative, artistically presented plates. Think spiced fish floss with raita and mint, sea conch with fermented shrimp dressing and onion jam and hand-dived scallop with lily bulb and ginger torch. Certain dishes, including the heavenly Borneo raw sugar bahulu - a Malay pastry similar to a madeleine - are served on handmade brassware crafted by some of the last few remaining brass artisans in Terengganu, Malaysia. Spot-on wine and non-alcoholic pairings are the icing on the cake.
