Yì by Jereme Leung

Singapore, Singapore

The debut restaurant of Singapore-born chef Jereme Leung, located within the historic Raffles Singapore hotel (No.17 in The World’s 50 Best Hotels) pays homage to ancient provincial Chinese cuisine. Yì (), meaning art in Mandarin, combines the essence of local cuisine, single-sourced and seasonal ingredients with an artistic and modern touch.

A la carte options are available as well as a set menu. Both include a range of reinvented classic regional dishes: take, for example, the Hundred-ring Cucumber with Sea Whelk, a typical dish from northern China served usually during warm days, or the juicy Pao Fan, poached rice submerged in a broth of seafood and shrimp served with added crispy brown rice. As is tradition, tea is offered to all guests, but is its wine pairing and cocktails are the best choice for the full experience.
