Spago

Singapore, Singapore

Glittering vistas of Singapore’s skyline and one of the most Instagrammed infinity pools in the city take centre stage in this crisp, white-shuttered dining room, which perches on the 57th floor of the Marina Bay Sands hotel. It’s the first international offshoot of celebrity chef Wolfgang Puck’s restaurant of the same name in Beverley Hills and serves up the same irresistible combination of chilled out glamour and breezy Californian plates. Menus are divided into land, sea and pasture and nod to the Asian setting through ingredients such as Hokkaido scallops, yuzu and bonito, while a globe-trotting wine list bounces deftly between the Old and New Worlds. It’s a favourite with well-heeled locals as well as hotel guests, drawn as much by the photo opportunities as the quality food.
