Set inside Singapore's excellent The Capitol Kempinsinki Hotel you'll find 15 Stamford, a restaurant from 'Demon Chef' Alvin Leung - best known for his prophylactic-inspired dessert. At The Bar though things are a little less surreal, with a sophisticated list that includes low-ABV options, twists on classics and some entirely original creations. Try the Plum Haze from the first section, which blends pisco, lime juice, plum sauce, plum bitters, orange bitters and salt. There's also a choice of Matusalem rum flights and Cuban-inspired bar snacks.
