The primary focus at Johannesburg’s Marble Restaurant is meat, evidenced by the massive wood-fired grill imported from Michigan. Open-fire cooking is the name of the game here, in a celebration of the best of South African cuisine. But the drinks are more than an afterthought, starting with a refined, accessible cocktail list with touches of local inspiration, such as the Lemon Verbena Margarita, made with rooibos-infused tequila, and a good selection of non-alcoholic options. There’s an extensive cellar with both local and international wines too. The bar area is welcoming – no reservation required – with impressive views of the city’s skyline, and a dedicated bar menu to accompany the drinks. Given the restaurant’s location on the Keyes Art Mile, interior design comes entirely from local artisans, such as custom panels behind the bar by Johannesburg’s Damien Grivas, while the ceramic tableware and wall tiles are by Cape Town artist Mervyn Gers.
