Where art, wine and locally sourced food collide, Tokara sits 400 meters above sea level on top of the Helshoogte Pass, presenting diners with breath-taking views over Stellenbosch’s vineyards and the twinkling blue of False Bay. A polished stone dining room is draped in large-scale tapestries by internationally renowned artist William Kentridge and filled with light from panoramic windows. Chef Caroline Coetzee draws on personal memories to create refined ‘plaaskos’ (farm cuisine). Think slow-cooked parsnip with bacon, brioche, cured egg yolk and parsnip emulsion to start, followed by springbok loin drenched in bay leaf and clove jus and a gooseberry clafoutis with fragrant basil ice cream to finish.
