Korean first-and-foremost, while drawing on additional inspirational from around the world, Evett is fast becoming the shining star of Seoul’s fine-dining scene. Australian-born chef, Joseph Lidgerwood – who namechecks The French Laundry in Napa and The Ledbury in London on his seriously impressive CV – has curated an eight-course lunch and a 12-course dinner menu firmly rooted in seasonal ingredients. While ever-changing, previous highlights include creatives dishes such as charcoal-grilled Korean beef sirloin with preserved watermelon, red pepper reduction, roasted onion sauce and fermented red pepper powder; 10-day dry-aged duck breast with chamoe (oriental melon) caramelised with gardenia fruit and smoked chrysanthemum flowers; and blood plums with brown rice cream, perilla seed cake, soy crème fraîche ice-cream and anise hyssop. Clean and minimal décor – white walls, pale food and brass accents – keep the focus on the food.
