After training under the likes of Pierre Gagnaire and Alain Ducasse, chef Kang Min-Chul returned to Seoul to open his eponymous restaurant. When it opened a few years back, it was with a single table, though since then – following widespread acclaim – that’s expanded to five, along with an eight-seater private dining room. There’s no missing the French influence that shape Kang's repertoire: well-versed in sauces and techniques, he makes a perfect pâté en croûte, and opens every tasting menu with precision-crafted amuse-bouches. Beyond those opening bites, though, it’s hard to know what to expect: dishes constantly change and evolve, and there’s famously no fixed menu. Past hits have included caviar-laced bibimbap, scallops with pumpkin mousse, and some memorable dry-aged duck (aged, air-dried then smoked). If you can’t score a table here, Kang also has GiwaKang, whose bold flavour pairings and house-aged jangs are the talk of the town.
