Mingoo Kang has trained under Basque master Martín Berasategui in San Sebastian and worked in the Miami and Bahamas outposts of renowned Japanese restaurant Nobu, but it is his travels around Korea in search of exciting ingredients that is the missing piece in the culinary puzzle at Mingles. This melding of eastern and western cuisines and techniques has seen the Seoul venue voted as the Best Restaurant in Korea for four years in a row. An industrial-chic basement space is the setting for Kang’s seven-course tasting menu full of reinterpreted Korean classics, many of which call for his homemade ‘jang’ (the trio of fermented sauces that form the backbone of the country’s cuisine).
