Barcelona’s cocktail cognoscenti have a new home-from-home: this quietly accomplished address, set in a street corner in El Born, where the drinks are inspired by the owners’ memories and travels. Armed with a rotovap (a lab-grade vacuum distiller), the duo extract flavours from the most unlikely of sources, including discarded oyster shells, nachos and roasted peppers. Daring though the flavours can sometimes be, they always feel considered, while the pared-back presentation couldn’t be more classic. Start with a lapsang-laced Juntos, their take on a margarita, then take a chance on something bolder: an Ojo Rojo, say, with tomato and fermented strawberry, or a rum-based Piedra Santa, spiked with banana and miso. More solid sustenance comes in the form of Japanese-style sandos – which, at under 10 euros, are something of a steal.
