Aitor Arregui's father, Pedro, used to say that to buy the best fish, you have to look the animal in the eyes to see if they still have their brightness: that means the fish is truly fresh. Today, the family-run restaurant has grown from a small street-side grill opened in 1964 to one of the Basque Country's most exclusive seafood restaurants, and a seasoned regular on The World's 50 Best list. It's known for its tradition of roasting fish whole, skin and all, with turbot and sole as major players, complemented by a Cantabrian Sea-inspired menu that includes fish cheeks (battered, smoked or pil-pil), smoke-licked wild mushrooms and a silky seafood bisque. There's also sirloin and lobster if you fancy something richer still, plus a range of lavish, locally inspired desserts.
