Smoke and mirrors this is not. Blazing onto the Madrid dining scene in 2021, Malaga-born chef Dani Garcia’s 14-seater Smoked Room is housed in the Hyatt Regency Hesperia Madrid hotel, cheek to jowl with the chef’s steakhouse restaurant Leña. The 15-course “Fire Omakase” menu showcases classical Japanese technique, with smoke being the seasoning and the finishing touch for every piece of meat, fish, seafood or vegetable that comes out of the open kitchen. Diners eat either at the Japanese maple wood bar or on one of two tables. The cavernous space was designed by Barcelona-based multidisciplinary Astet Studio and emulates what it might feel like to eat inside the crater of a volcano with its matt charcoal palette and overhead arrangement of textured black… meteors? It doesn’t matter because this unique dining experience will set foodies' hearts on fire.
