This is a culinary journey like no other. A collaboration between brothers Mario, Diego and Rafael Sandoval, Coque takes diners on a four-part experience. The evening begins in the cocktail bar with snacks and a signature drink, then moves on to the wine cellar, where Rafael commands a list of more than 3,000 labels, sherries included. Next, it's to the kitchen, where chef Mario and his team are at work, then on to the dining room, with charming Diego commanding the front-of-house. At each stopover, you'll be offered dish after dish (around 15 courses in total) from a tasting menu that is a lesson in blending innovation with the city's rich culinary heritage – all immaculately executed. Work your way through the likes of gazpacho with cucumber and kimchi; hoisin razor clams; suckling pig; and lobster tartare with green chillies.
