A collaboration between brothers Mario, Diego and Rafael Sandoval, Coque takes diners on a four-part journey. The experience begins in the cocktail bar with snacks and a signature drink, then moves on to the wine cellar, where Rafael commands a list of more than 3,000 labels. Next, it’s to the kitchen, where chef Mario and his team are at work, then on to the dining room, with charming Diego commanding the front of house. A 15-course tasting menu takes in innovative dishes such as hoisin razor clams and lobster tartare with green chillies.
