Basel's Cheval Blanc serves up a feast for the senses, both through its nuanced cuisine and Grand Hotel Les Trois Rois address. Floral display-studded interiors feature parquet floors, high ceilings and twinkling chandeliers, while outside the Rhine twinkles. Led by Bavarian chef Peter Knogl, who arrived in 2007 and has since bagged three Michelin stars, the restaurant shows off French technique enriched by Mediterranean and Asian influence. Expect a mastery of sauces, presentation and harmonious flavour combinations, with unexpected twists along the way. Langoustine might come with madras curry and granny smith apple while Wagyu beef entrecôte sits alongside okra and Japanese vinaigrette. You'll also spy all the haute favourites – lobster, caviar, foie gras, champagne – and a carte blanche exclusive four-course lunch, which is a little more wallet-friendly, with four courses and coffee.
