An unpretentious 12-seat counter restaurant where only the best raw produce is used, this is one of the best places for sushi in Taipei. A traditional omakase tasting experience takes diners through the finest akami, chutoro and otoro tuna nigiris, abalone, multiple varieties of sea urchin and, of course, the finest sakes. Each offering is made with quiet precision, and the progression of dishes is designed to highlight texture and flavour at every stage. Chef Adachi is friendly, attentive and ever-present, deftly preparing his creations at the counter and explaining the ingredients and their origins. The small, intimate space means diners can watch every movement, from the delicate folding of nori to the perfect shaping of rice. As with many Japanese restaurants, reservations are difficult to come by and often by introduction only.
