For seven long, hard-working years, chef Alain Huang took diners on a gastronomic odyssey as head chef at Taipei hotspot, Raw. But he felt he needed a greater purpose, so took a break, before launching Restaurant A in 2023, which serves up a white-gloved experience of French food, instead using Asian techniques and styles. Dominating two floors of the Shin Kong Mitsukoshi Diamond Towers, this dazzling white, art-filled space is meant to mimic the experience of dining in the clouds, serving a number of courses across three and a half hours. He’s teamed up with creative heavyweights to complete the mesmerising experience, with fashion-forward designer Apu Jan in charge of staff uniforms while artists Hsiang-han and Dong Yan-li looked after crockery. Expect to be wowed.
