When Garima Arora was named Asia’s Best Female Chef in 2019, her restaurant was also the highest new entry in Asia’s 50 Best, jumping straight in at 16. Before opening Gaa in 2017, Mumbai-born Arora honed her talent at Copenhagen’s Noma, which topped the World’s 50 Best list on four separate occasions, and fellow Bangkok-based restaurant Gaggan, named Asia’s Best for four consecutive years. Melding flavours from India, Gaa’s dishes include the Bombay Sandwich – spicy uni with Kashmiri morel paniyaram – and crab served with warm macadamia milk curry. The desserts, including the standout oscietra caviar with coconut bread and cashew ice cream, are not to be missed. The restaurant earned a Michelin star in 2019, with Arora becoming the first Indian woman to receive the accolade.
