Despite the French ring to its name, Le Du’s name is taken from the Thai word for ‘seasons’. So, it’s no surprise to learn seasonal Thai ingredients play a starring role here, with dishes influenced by French techniques. Founder chef Thitid "Ton" Tassanakajohn is the young prodigy at the heart of it all: Culinary Institute of America graduate, alumni of Eleven Madison Park and Jean-Georges, and a Top Chef Thailand judge, which has furnished him with a firm following. Choose between a four or six-course tasting menu, and keep your eyes peeled signature khao chae, a dish of shrimp and pork pâté, pickled radish and jasmine ice cream. Also unmissable is the kombucha pairing, which takes off the heat and leaves diners feeling refreshed.
