Set within the Siam Kempinski Hotel, Sra Bua by Kiin Kiin is the Bangkok outpost of Kiin Kiin, a gourmet Thai-fusion restaurant in Copenhagen. Both are the brainchild of Danish chef Henrik Yde-Andersen, widely regarded as a pioneer of modern Thai cuisine. Sra Bua is known for its playful interpretation of molecular Thai gastronomy, served in a bewitchingly ornate dining room of warm teak wood and high carved ceilings, complete with two tranquil lotus ponds – the restaurant's namesake – at its centre. The experience is as theatrical as it is flavourful, with modern techniques used to reinterpret familiar Thai dishes in unexpected ways. Liquid nitrogen is a prominent feature here: red curry might appear as ice cream; crab laksa in a gelato cone; and coconut soup in a cloud of aromatic fog.
