Sri Trat Restaurant and Bar

Bangkok, Thailand

With a fiery menu that transports diners to eastern Thailand’s coastal province of Trat, Sri Trat was opened in 2017 by Wongwich “Ack” Sripinyo and his wife Nontawan “Taam” Chitwattanagorn. Honouring the recipes that Sripinyo’s mother – a former Trat beauty queen, depicted wearing a crown in a huge wall mural on one of the restaurant’s brick walls – used to cook. The focus is on seafood, presented in myriad different ways, with signature dishes including stir-fried chicken thigh with aromatic Siam cardamom, pan-fried patty of minced pork and salted king mackerel and stir-fried glass noodles with pork and cha-om (a Thai herb). Having been born in Trat, Sripinyo and Chitwattanagorn have access to the fresh ingredients that form the lynchpin of their cuisine, working with small producers and fishermen in Rayong, Isaan and beyond who do not usually supply produce to provinces outside their own.
