You’ll find this ocean-green beacon to fine drinking in Edinburgh’s ever-on-the-up Leith area. Behind it are Iain McPherson and Kyle Jamieson (Panda & Sons, Bon Vivant et al.), who’ve drawn upon Leith’s port-town heritage to bring together a menu championing Scottish produce peppered with influence brought in on the trade winds. While it may feel like a cosy local boozer, don’t underestimate the superlative skillset behind the shell-bedecked bar. It draws a lively crowd for its exciting cocktail list – see the likes of Sergeant Pepper, a mint-infused Seven Crofts’ Fisherman’s Strength gin stirred with tropical chopping board syrup (if you can't smell the words you're in the wrong place), bramble liqueur, apple juice and a splash of local Pilot Lime and Pepper Gose. An indie-led whisky list shouldn’t be missed, either. Unsure? A backlit back bar, split into flavour profiles, will guide you toward something light or something smoky, no bother. And for some scran alongside, expect quality charcuterie and cheeseboards fed by city stalwarts East Coast Cured and I.J. Mellis.
