Acclaimed chef Hélène Darroze, on whom the character of Colette in Disney Pixar’s Ratatouille was based, took over the dining room of The Connaught from Angela Hartnett in 2008. Late 2019 saw the dining room completely revamped by Paris-based architect Pierre Yovanovitch, resulting in a more relaxed, feminine feel reflective of Darroze's beautifully stylised food. The design is backed by a new menu (the glass solitaire marbles are gone), where just the key ingredient is named, alongside its provenance. For example 'Pigeon - Denbighshire, Wales', or 'Turbot - The Ajax, Cornwall'. Whichever they choose to plump for, diners can expect culinary craft of the highest order.
