At Ibai, you'll feel Basque exceptionalism in every corner. The room is sleek and assured: dark wooden booths overlook the open kitchen, where flames work over enormous slabs of steak, before they are set – charred and steaming – on the counter to rest. As you'd imagine, the menu is a tribute to northern Spain, with nods to the region’s French border in dishes like the Le Noir de Bigorre ham, draped over crisps and smoked piparra peppers, or the salty and sweet croque Ibai – honey-glazed toast bites layered with carabinero, black pudding and Tomme de Brebis. The pièce de resistance is, of course, the beef: a full kilogram of either Black Angus, Galician Blond or wagyu, beautifully seared and sliced to reveal scarlet tender strips, showing flame-cooking at its finest. Book a spot as close to the kitchen as possible – you’ll want front row seats to the action.
