Silo began life in Australia before re-locating to Brighton, the only UK city with a Green Party MP; now its pioneering zero-waste approach to eco eating has found a new home in East London. With a back story like that the grungy location overlooking a canal comes as no surprise but what might come as a shock are chic interiors, though what is even more surprising is that the furniture is recycled and the crockery made from plastic bags and crushed wine bottles. Chef-owner Doug McMaster has eliminated waste by dealing directly with farmers, using re-USble delivery vessels and choosing local ingredients that generated no waste; anything leftover is composted. McMaster describes the resulting menu as a ‘pre-industrial food system’ – celeriac with caramelised cream and cobnut; cabbage with pine and sea buckthorn – while meat dishes such as Redwoods Farm chicken with buttermilk and lovage adhere to a nose-to-tail approach. To drink, there are local beers, European wine and fermented drinks made in an on-site brew
