Dark wood and wallpaper lined, strewn with sink-in seating in eye-catching hues and with plenty of corners for long gossip sessions, this is the kind of bar you plan to pop in for one, but end up staying for many. Tongue-in-cheek names on the menu hint at what’s to come – think a Holy Mole featuring chilli and fruit-tinged mole sauce, mezcal and agave, or a California Redwood with sandalwood-infused amaro, rosemary, lime and soda. Food is a reason to come rather than an afterthought, with serves such as reinvented Gildas (with soppressata salame, coppa ham, marinated anchovies, black olive and provolone cheese) or mini mortadella corn dogs with poblano chili batter and jalapeño aioli.
