Chicago's Truce concerns itself with two things – coffee and cocktails – and the balance of power between them as the day wears on. The menu is divided into morning and evening secions, with a glut of coffee-based libations througout, including the iced Espresso Colada, blended with pineapple, ginger, black lime and coconut milk and the Truce Cocktail, which uses cold brew bourbon, cognac, apricot, caffè amaro and sweet vermouth. Light bites are designed to provide some ballast, with high-low offerings ranging from pizza bagels to caviar, and a 90-second tiramisu, of course.
