A terrace framed by potted plants offers a hint of what lies beyond the doors of Tzuco, found a few blocks west of the banks of Lake Michigan. Within the rough-luxe, earthy dining room, visionary Mexican chef Carlos Gaytán sends out a menu that speaks of both the country's terroir and his family heritage, combined with his background in classic French haute cuisine. The team has an intricate knowledge of native ingredients, all of them spending time amid the markets, farms and kitchens of Gaytán's home town of Guerrero before taking to the pass. Humble in origin, dishes like cochinita pibil with habanero salsa, chile relleno and barbacoa are elevated to their highest reaches. Each month, Gaytán also offers a short Back to my Roots menu, for which he creates a couple of special dishes that bring the essence of a particular region in Mexico to life.
