Concealed behind a gilded door within Las Vegas' Bellagio Resort & Casino, The Vault is a trove of rare vintage spirits, and a cocktail menu to match. The setting – the hotel's former casino cage – has become something intimate and geuninely glamorous, its centrepiece presided over by an elaborate chandelier that casts the room in a gentle glow. The cocktail list draws on historical recipes, as well as timeworn techniques, transported to modern day. Among the signatures is the Gold Rush Martinez – which pays tribute to both the martini and the manhattan – made with vintage gin and vermouth. The snacks calibrate to the surroundings, ranging from caviar and nigiri and wagyu sandos.
