The Bazaar by José Andrés

Miami, US

José Andrés is one of the world's most decorated chefs, with accolades including the 50 Best Icon Award and even James Beard Humanitarian of the Year. Hailing from Spain he now owns and operates over 30 restaurants, including Bazaar here in Miami. The interior is an Art Deco den of iniquity, inspired by the glamour speakeasies of 1930s Miami and Singapore and arranged around a vast central chandelier. The menu takes similarly global cues with atypically Iberian quesos and jamones mixing with Singaporean street food Kueh Pai Ti, which combines shrimp, peanuts, chilli sauce, plus a dish of Cuban coffee-rubbed churrasco and even Japanese-inspired tacos stuffed with grilled eel, shiso, cucumber, wasabi and pork pork chicharrones. It's a sharing concept so guests are advised to try a little of everything and join Andrés on his whistle-stop tour of the world.
