A 60th floor, tile-and-glass haven with panoramic views over Manhattan is the spectacular setting for restaurateur Danny Meyer’s latest offering. Jason Pfeifer – who has worked with world-class chefs Thomas Keller, Jonathan Benno and René Redzepi – has created a prix-fixe menu with its heart in classical French techniques. A multi-layered rectangle of foie gras presse sits beside snails swaddled in blankets of sausage and buttery lobster quenelle. The mostly French wine list has an impressive selection of white Burgundies while sophisticated cocktails such as the ‘Castle Garden’ (gin, Benedictine, honey, lime) encourage diners to linger and make use of binoculars thoughtfully left on windowsills.
