From the minimalist design, 200-year-old Hinoki wood and rare Tamo ash counter seating, to the Edo-era ice box, kimono-wearing staff and meticulous, near-ceremonial treatment of the menu, Sushi Noz is an authentic slice of Japan transplanted on the Upper East Side. Offering dining for 14 guests, the omakase tasting menu is a paean to Edomae tradition. Originating from the Toyko Bay region, the treatment of seafood here is dominated by heritage technique including marinating (in soy, vinegar and salt) and blanching to offer unrivalled flavour. At the helm is Hokkaido-born sushi master chef Nozomu Abe, who reverence for ocean delights draws heavily on legacy – his grandfather owned a seafood company that set ‘Noz’ on his culinary path. To dine here is to witness true craftsmanship. The engaging menu is fronted by five-six small otsumami plates championing vegetables and fish before diving deep into seasonal nigiri over 12-14 plates. Miso soup, vinegar-laced rice and tamago (a rolled omelette) add pace while pitch-perfect presentation is a given. Sure, the bill’s eyewatering, but for those looking for the ultimate omakase, the experience is priceless.
