Co-owners Robbie Wilson and Emily Perry Wilson consider the passion behind Bird Dog’s cuisine to be a “multicultural pile-up”, where northern Californian and Japanese influences dominate the seasonal menu. Wilson, who worked at Maison Troisgros, draws on his French training to create a three-food-group menu that features sophisticated raw, proteins and vegetable/grain dishes. Think steelhead trout with green garlic, red currant and buttermilk; carrots with chai flavours, pineapple and crème fraiche; and bacon with whipped tofu and chicharrón.
