It isn’t only the fact that it’s accessed through a door hidden behind a bookshelf inside sister restaurant PaaDee that makes Langbaan (deriving from the Thai word for ‘back of the house’) feel like the sort of secret you want to be in on. This 24-seat, reclaimed-wood cocoon offers a modern interpretation of ancient Thai traditions. Chef Brandon Hirahara draws inspiration from a specific theme (summer 2019 is ‘Thai Family Gatherings’) to create refined tasting menus using Pacific Northwest ingredients. A signature nibble of crispy rice cup filled with scallop and coconut cream is followed by barbeque pork with garlic, lime leaf and chilli. Be quick, this gets booked weeks in advance.
