Legendary Portland barmen Jeffrey Morgenthaler and Benjamin Amberg (both formerly of Clyde Common) opened Pacific Standard in the lobby of the hip Kex Hotel as an ode to all things Pacific Northwest. For the large, beautifully decorated living room-like space, the duo have curated a restrained cocktail menu that’s as off-the-wall as it is approachable. Alcohol percentages are spelled out to help guests make informed decisions, with a range running the gamut from no-booze tipples to a 39 per cent abv Old Fashioned served over one large glistening ice cube. Local wines and beers, and a few other surprises like CBD soda and Morgenthaler’s canned Bourbon Renewal cocktail, flank the cocktail menu for a little extra sparkle, and while many bars in Portland nixed happy hour during the pandemic, Pacific Standard has revived the practice with great deals every afternoon.
