Named for chef David Yoshimura’s dual heritage – the word Nisei refers to a second-generation Japanese immigrant born in America – this Russian Hill spot combines sun-drenched California produce with an Asian approach to flavour. Inside a simple dining room of black-painted walls and wood tables, the alumnus of Asador Etxebarri and Nihonryori Ryugin serves Bay Area produce in a way unique to his own experience. As well as heading up the kitchen, Yoshimura is a certified sommelier, and along with master sommelier Andrey Ivanov, helps shape a programme where drink is as considered as the food. Tasting menu dishes might range from green tomato, Hog Island oyster and kuzu noodle to an elevated take on omurice (omlette rice) with caviar and vegetable demi-glace. At the meal’s end, wagashi – traditional Japanese sweets – are reinterpreted with creativity and precision.
