Harking back to his uncle's 1980s beach parties on the island of Maui, which revolved around sailing, cooking, fishing and playing music, chef Ravi Kapur brings together fun vibes and flavours from his Hawaii homeland at Liholiho Yacht Club – even though sail boats don't actually form part of the vista. Californian seafood leads the concise menu, with highlights such as tuna poke with nori crackers and fresh shrimp given zing with a satsuma cucumber salsa. Other tasty bites you might find in the larger Cherry Cuts section include local ling cod, swordfish katsu and fried game hen smothered in a sweet and sour glaze. Regulars know to leave room for the baked Hawaii orange chiffon cake with coconut sorbet.
