Kamonegi

Seattle, US

It may be tiny, a crooked warren of shadowy rooms trimmed in wood, but this Japanese haunt in Fremont is hugely popular. Mutsuko Soma learned the art of hand-rolling soba noodles from her grandmother, who made them from the family's homegrown rice and buckwheat. But Soma doesn't allow herself to be confined by tradition. Her classic signature soba – which comes bukkake, seiro or nanban style, typically with sliced duck breast, silky tofu or seasonal veggies – sits alongside unexpected pairings such as foie gras 'tofu' with wasabi, and even extends to tempura-fried Oreos. The tasting menu is equally exciting, ending with the ever-intriguing Magic Cake – pair with sake for the full experience. This is a bold, creative chef going where few have gone before. Kamonegi is surprising, challenging and a whole lot of fun.
