Rumba brings a spot of Caribbean sunshine to famously rainy Seattle. The cocktail list is an ode to rum cocktails in all their various guises from punches to swizzles and tiki to daiquiris. There are even sub-sections for classic and modern iterations of the daquiri, with the latter including the ‘Clear Daiquiri CO2’ (a carbonated blend of Rhum JM, Bounty White Rum, clarified lime juice and cane sugar). As for bar snacks, think tacos, empanadas and jerk chicken wings.
