Sagra Italian Pastificio

Dubai, United Arab Emirates

A large sign on the glass front of Sagra Italian Pastaficio reads: ‘Ciao Jumeirah, fancy some pasta?’ It seems Dubai’s residents and visitors don’t need asking twice, as this teeny 16-seater restaurant buzzes noon and night. It’s the brainchild of former designer Federica Ranieri, who is so passionate about Italian cuisine, she decided to bring the age-old techniques and traditions to Sagra. Starters run the classics gamut but with a twist – bruschetta might be topped with ricotta mousse and a tomato confit; a burrata salad is elevated with pistachios. But it’s the artisanal pasta, hand-rolled daily on the premises, that’s the star. If you’re lucky enough to get a table or a pew at the tiny counter, loosen your belt for mushroom ravioli with truffle sauce; lasagne made with a wagyu beef ragu; or pappardelle with lamb bolognese. If – and that’s a big if – you have room, the tiramisu is legendary. They also run workshops where participants learn to make tagliatelle, orecchiette or cavatelli, and traditional Genoese pesto using a pestle and mortar.
