There’s more than just steak and tuna on show: standouts include charcoal-grilled Wagyu tongue, wild-caught Japanese oysters and – for Dubai’s summer season – icy somen noodles in a wagyu citrus dashi. Those seduced by set menus should try the omakase sushi experience, prepared using fresh ingredients flown in from Tokyo’s Toyosu Market. If you’re opting for omakase, take a counter seat – although the restaurant has booths and tables, as well as an expansive terrace, the counter offers an intimate chef to diner experience.
