The usually spacious setting must have an air of elegance, but it also needs to feel friendly, the sort of unpretentious place where you can equally order a cappuccino or a magnum of champagne. And the menu should offer well-executed French comfort food. The Guild in Dubai, helmed by Tom Arnel, covers all of the above. The main room, The Salon, exudes at-ease glamour: for the best see-and-be-seen spot, sit near the open kitchen, where chefs in tall white hats send out all the classics – moules mariniére, wood-roasted snails, Dover sole à la meunière, steak au poivre, plus, of course, crispy duck fat fries to go with them all. There are other dining spaces in this nearly 2,000 sq.m space, including a crimson-red Café; the offbeat Potting Shed for cocktails; and Rockpool, home to the city’s biggest seafood buffet.
