Bodega Garzón has become the golden child of Uruguay’s wine industry. The boutique winery is located in Maldonado, on the Atlantic coast. Not content with merely creating cracking wines, the vineyard added a destination restaurant to the mix. Lauded chef Francis Mallmann helped the culinary team develop their open-flame cooking technique and devise a market menu. Dishes reflect the region’s natural bounty: a starter of chard polenta comes with seasonal mushrooms, spinach and lemon cream; pork rib is paired with cabbage salad, fennel and dukkha; Alfajores (shortbread-like biscuits) are elevated with candied kumquats and house-made tahini ice cream. The 120-seat restaurant features a main room, panoramic terraces, multiple fire cooking areas and a private dining space. If you have room in your suitcase, don’t leave without a bottle of the Colinas de Garzón extra-virgin olive oil.
