Federico Desseno’s family-run, feet-in-the-sand, flame-grilled restaurant by the beach is one of Uruguay’s best-kept secrets. Drawing on his Argentine heritage, Desseno channels his command of fire through beautiful clay ovens that he built himself and sources the freshest, line-caught seafood such as black drum, sea bass and squid from local fishermen. Prepared by hand in front of you, corvina is slow-cooked on the griddle with chestnut cream while lemon-studded flounder is cooked whole in the clay oven. These warm, smoky flavours are cut through with fresh, snappy dishes like avocado, chilli and matcha gazpacho or roasted vegetables with caper pesto. Dessert takes you back to the clay oven where plums and figs are baked into a crumble and topped with toasted almonds and mascabo sugar. Only open during summer (check Marismo’s Instagram page for dates), Marismo makes for a seasonal experience of José Ignacio’s go-slow attitude and the region’s ripest ingredients.
