1921 Restaurant

Housed in a handsome former palace, 1921 Restaurant is the culinary pearl of Montevideo’s Sofitel hotel. As you might guess from the hotel’s stately, old-world charm, the name references the year in which this grand dame first opened. The round, domed dining room is a sight to behold, with ornate furnishings and plush touches everywhere. By day, admire the views of the sparkling Rio de La Plata; by night, modern chandeliers provide glow and sparkle. Japanese-Argentinian chef Maximiliano Matsumoto heads up the kitchen, shining a spotlight on seasonal, regional cuisine with international twists, like the okonomiyaki with sweetbreads. As you’d expect in Argentina, succulent cuts of meat play a star role: think grass-fed ribeye steak with sesame béarnaise, for example. Cooking with a conscience, Matsumuto champions local produce and meat with zero-carbon-emission certification.
