The Fasano family have been one of the most respected names in South American hospitality for more than a century and this hill-top spot boasts all the glitz, glamour and glorious Italian cooking you’d expect from the Brazilian dynasty. Unapologetically nostalgic menus (including homemade pasta) are consistently excellent, but the real draw is the setting. This beautifully designed rocky cabin by Isay Weinfeld perches like an eagle’s nest atop one of Uruguay’s highest peaks and offers stunning views of the virgin countryside and Maldonado river. Interiors nod to the breezy Brazilian design of the 1950s, but the best seat in the house is on the rattan-clad balcony; if sitting here, bring a jacket as evenings are generally cool and damp.
