Flexing his culinary muscles across a vegetarian, a la carte and seven-course set menu, chef Christian Le Squer (formerly of Le Cinq) dishes dazzles with characteristically surprising juxtapositioning of textures and flavours. Decadent ingredients form the backbone of a roll call of spectacularly presented creations including pistachio sorbet with citrus, Brittany blue lobster bisque, marinated tomato with dill broth and mousseline scallops, cauliflower cream and caviar.
