The Nén restaurant brand was established by Summer Le, whose decade of experience as a food blogger writing about Vietnam’s rich culinary tapestry proved to be an excellent starting block. She welcomed her first guests to the Danang flagship in 2017, with the aim of showcasing the stories behind the country’s produce and flavours, not only to visitors but to its residents (hence the name Nén, a Vietnamese ingredient so obscure that even Le’s friends in Hanoi and Saigon hadn’t heard of it). The Sto:ry menu is a concept that weaves this storytelling through nine courses, all of which follow a main theme or narrative. It could be ‘Time’, for example, ‘Light’ or ‘Journey’. One thing you can be sure of is hyper-traceability, whether vegetables, edible flowers, fruit and fragrant herbs sourced from Nén’s farms to straight-from-the-sea fish. Indeed, this was the first restaurant in Vietnam to be awarded a Michelin Green Star. Opt for the imaginative alcohol pairing and you could be sipping a sparkling sake from Kyoto, followed by a regional rice wine, a fino sherry, and a Californian red, before finishing with a house-made liqueur.
