Housed in an old colonial apartment block, a shabby-chic entrance yields to reveal Summer Experiment’s cool-as-they-come big sister. Here, Jay Moir’s spirited drinks list showcases creativity and craft, and while it’s less concept-driven, there’s plenty of his signature botanicals and spice along the way. As well as an 11-metre bar (one of the city’s longest), there are plenty of nooks to linger over across the industrial space, with two sides of floor-to-ceiling windows bringing the outdoors in. The likes of pork ribs, grilled chicken with black sticky rice and Aussie seafood are ideal break points in a game of pool, while pours like Nuetella Negroni and East & West – Pepe Lopez, green tea liqueur, homemade pandan bamboo syrup and freshly pressed pineapple and lime juice – keep the taste buds dancing. As they say themselves, the best sip is yet to come.
